CHEESE SET
Marking the first drop-forged stainless steel knife to come out of Sheffield in 20 years, the blanks for these knives were forged on a 6 hundred-weight Massey drop stamp hammer by Footprint Tools.
Jon’s set of cheese knives is the first project to use these drop-forged blanks. The initial form was created using tooling specially made for us by the 150-year-old drop-forging company. From there, we brought the knives back to our workshop to hammer them into their final dimensions. Our use of sharp dies to precisely shape the steel has left a crisp, rippled forged texture on the blades. The set comprises three knives:
Mini-cleaver: chunky and robust like a tiny axe this knife allows you to put the power down when splitting parmesan or cutting cheddar. Perfect for hard and semi-hard cheeses
Narrow knife: with a swooping profile that leads to a pointy tip this knife is perfect for cutting rinds and going through stickier cheeses and equally great for charcuterie
Butter knife: a rounded blade great for gathering soft cheeses and spreading on crackers or toast
The set comes an a custom leather roll in black suede that was hand crafted by Owen Leather.
