THE SLICER

For the last of this year’s Classic Range Editions, we have forged a small run of Slicers.  These long, narrow blades are perfect for slicing meat or fish, whether in the kitchen or at the dining table. The knives are forged from our go-to steel combination—Japanese Blue Paper Steel clad with folded iron.

As with the previous Classic Editions, the whole team has played a part in their creation. Guillermo has forged the blades using slightly thicker starting stock than usual. This gives the blades a distinct taper along their length and adds a little stiffness to these long knives. Dan has crafted the handles, which, in keeping with the materials used in our other Classic Range knives, are made from English walnut and copper. Finally, our sharpener Menelik has applied the final edge using a series of Japanese whetstones, giving the knives a razor-sharp edge that retains a slight “toothiness” to make slicing meat effortless.

Hunting Knife

Over 6 years ago, we headed down to the Hunter Gather Cook treehouse to meet Nick Weston and work with him on developing the perfect hunting knife. As an expert in hunting, fishing, and foraging, Nick was the perfect candidate to help us understand exactly what was needed in such a blade. After many hours of game butchery and various rounds of prototyping, we finally came up with a design we were happy with.

Over the years, the design has continued to develop alongside our skills and tooling, but the key features of the knife remain. This latest batch of hunters has been made using a combination of careful hand forging and a specially made former in our largest power hammer to forge an integral bolster. This feature—the sudden increase in steel thickness where the blade meets the handle—has many benefits in this style of knife. It makes the knife easier to keep clean, improves the balance, and adds strength. The blade and tang both feature severe tapers, meaning the edge is very strong towards the heel but has a very fine, delicate tip, perfect for the surprisingly intricate process of butchering game.

For the steel, James has used our house alloy, Blenheim Black, clad with a combination of mild steel and pure nickel. Blenheim Black is a steel that we have had produced specially for us. It is made using an exceptionally pure iron base and contains plenty of carbon and tungsten. The result is a steel well-suited to our heavy forging processes, which, with a little practice, will produce an incredibly hard, long-lasting edge.

The handles are made from a variety of different timbers. We’ve got some beautifully figured English walnut and horse chestnut—milled and dried by our friends at Goldfinch Furniture—and some lighter-toned Maple with a stunning quilted pattern.

Each knife comes with a hand made leather sheath by local leatherworker Owen Leather.
